Ingredients for 1 servings:

  • 125 g flour
  • 75 g sugar
  • 125 g sugar
  • 2 packets of vanilla sugar
  • Salt
  • 100 g butter, soft
  • 500 g quark, 20% fat
  • 3 eggs
  • 1 pack of pudding powder
  • 125 g powdered sugar
  • 2 tbsp lemon juice
  • 24 paper cups, 5 cm Ø

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For 12 muffins

Nestle two paper baking cups into each other and place in the holes of a 12-cup muffin tin. Combine the flour, 75g sugar, 1 tablespoon vanilla sugar, 1 pinch of salt, and small pieces of butter, first using the dough hook of a hand mixer and then briefly by hand to form crumbles. Chill for about 30 minutes. Briefly mix the quark, eggs, 125g sugar, 1 tablespoon vanilla sugar, 1 pinch of salt, and pudding powder. Pour into the baking cups. Sprinkle with crumbles. Bake in a preheated oven (electric oven: 200°C / fan: 175°C / gas mark 3) for about 30 minutes. Let cool in the tin. Mix together the icing sugar and lemon juice. Sprinkle over the muffins in stripes. Let dry.
