Ingredients for 1 servings:
- 250 g butter, soft
- 200 g sugar
- 4 eggs
- 250 g flour
- 1 tbsp baking powder
- 1 tsp lemon zest, grated
- 2 tbsp rum
- 1 pinch of salt
- 6 apples, more depending on size
- some butter and breadcrumbs for the baking tin
- some lemon juice
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes
Using a hand mixer, mix the butter, sugar, and eggs well. Then add the remaining ingredients and mix in. Pour the batter into a greased and breadcrumb-coated springform pan (I used a 28 cm pan). Peel and quarter the apples, remove the cores, and drizzle with a little lemon juice. Score/score the apples lengthwise with a knife or fork and arrange them on the batter. Bake in a preheated oven (top and bottom heat) at 175°C for about 60 minutes. Once cooled, sprinkle with powdered sugar.
