Potato stew with apple

Ingredients for 2 servings:

  • 100 g bacon, streaky, finely diced
  • 1 onion(s), finely diced
  • 4 large potatoes, roughly diced
  • ½ stalk(s) leek, cut into rings
  • 2 large carrots, finely diced
  • 1.2 liters of vegetable broth
  • 2 apples, finely diced
  • salt and pepper
  • Marjoram, dried

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Inexpensive and quick to prepare

Fry the bacon over medium heat. Add the onion and sauté. Add the potatoes, carrots, and leek and fry briefly, stirring occasionally. Pour in the stock, bring to a boil, and then simmer over medium heat for about 15-20 minutes. Add the diced apple and simmer for another 10 minutes. Season generously with salt and pepper. Sprinkle with marjoram before serving. If desired, you can also add chopped sausages to the soup. Choose the apple variety according to your taste. I find that slightly firmer, tart apples like Granny Smith go very well in this soup.
