Fany's lime water with chia seeds

Ingredients for 4 servings:

  • 3 large organic limes, quartered
  • 1 liter of water
  • 100 g sugar or amount as required
  • 43 g chia seeds
  • ice cubes

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Total time approx. 35 minutes

In a blender, pulse the limes, water, and sugar 3-4 times, just enough to extract the juice from the fruit, but not to puree the peel, as this would make the drink too bitter. Strain through a fine sieve into a suitable container. Season with sugar to taste. Whisk in the chia seeds and refrigerate for at least 30 minutes, or until completely chilled. Stir again before serving and serve over ice.
