April's Cherry Lemonade

Ingredients for 6 servings:

  • 400 g sweet cherries, weighed without stone
  • 355 ml lemon juice, freshly squeezed
  • 200 g sugar, or amount as required
  • 1 ½ tsp red wine vinegar
  • 710 ml mineral water, still
  • ice cubes

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

In a blender/mixer, blend the cherries, lemon juice, sugar, and vinegar until very smooth. Strain the juice through a fine sieve using a rubber spatula. If you want a very smooth consistency, strain the juice a second time. In a container, combine the cherry juice and water. Refrigerate until completely cold, but enjoy the same day. Serve over ice.
