Ingredients for 2 servings:

  • 750 g mushrooms
  • 4 tomatoes
  • 2 cloves garlic
  • 1 onion(s)
  • Parsley (flat-leaf parsley)
  • vegetable broth
  • lemon juice
  • 3 tbsp crème fraîche
  • pepper
  • Paprika powder
  • oregano
  • olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean the mushrooms, dice the tomatoes, chop the garlic, and peel the onions, halve them, and slice the halves. Heat olive oil in a pan, add the mushrooms, then add the rest and let them sizzle briefly. Sprinkle with pepper, oregano, and paprika. Pour in a little vegetable stock (I always adjust the amount by eye). When the vegetable stock has reduced a little, drizzle lemon juice over the mushrooms. After about 5 minutes, add the crème fraîche and sprinkle with chopped parsley. This goes best with a crisp salad and a herb baguette.
