Rice and spinach casserole

Ingredients for 2 servings:

  • 1 bag of rice
  • salt water
  • ½ pack spinach (minis, frozen)
  • 2 eggs
  • 150 g meat sausage (poultry sausage)
  • 5 cherry tomatoes
  • ½ pack of cheese, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cook the boil-in-the-bag rice in salted water according to the instructions. Defrost the spinach in the microwave. Meanwhile, hard-boil 2 eggs (approx. 7 minutes). Dice the sausage, cherry tomatoes, and eggs. Spread the cooked rice in a casserole dish, top with the sausage, eggs, and cherry tomatoes, and then scatter the spinach over the rice. Finally, sprinkle with cheese and bake the casserole in the oven at 200°C for about 25 minutes.
