Sheep cheese medallions with herbs

Ingredients for 2 servings:

  • 1 small onion(s)
  • 100 g tomatoes
  • 200 g sheep’s cheese
  • 80 g flour
  • 1 tbsp chives
  • 1 tbsp parsley
  • 1 tbsp rosemary
  • 1 pinch of chili
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Core the tomatoes and chop them finely. Chop the onions finely. Crumble the feta cheese over the tomatoes. Mix with flour, chives, parsley, rosemary, chili, salt, and pepper. Form large patties on a baking sheet lined with baking paper and bake at 220°C (top/bottom heat) for 15 minutes. The patties are delicious hot or cold.
