Cut 6 apples crosswise, remove the cores, and place them in a baking dish. Peel the apples if you like. Mix the sugar and vanilla sugar in the desired quantities and fill the hollow of the apple. In a separate container, combine 3 cups of crème fraîche with 3 egg yolks, add a little sugar to taste, and a generous splash of cream. Pour the mixture over the apples, allowing some of the liquid to run into the baking dish. Bake at 150°C for about 45 minutes.
