Baked Apple Chia Pudding

Ingredients for 4 servings:

  • 250 ml soy milk (soy drink), (vanilla), alternatively another plant-based milk
  • 4 tbsp chia seeds
  • 2 large apples
  • 4 tbsp cane sugar
  • ½ tsp cinnamon
  • 4 tsp raspberry jam
  • 4 tbsp walnuts, crushed

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 20 minutes; Total time approx. 4 hours 35 minutes

Let the chia seeds soak in the soy milk for at least 4 hours, or overnight if you prefer. Then make the baked apples. Peel and core the apples, and cut them into small pieces. Add the brown sugar, ground cinnamon, raspberry jam, and chopped walnuts. Bake in the oven at 200°C for 20 minutes. Then let the baked apple pieces cool slightly. Now it’s time to serve. First, pour the chia pudding into glasses. Then arrange the baked apple pieces on top – and you’re done.
