Ingredients for 1 servings:

  • 400 g flour
  • 1 cube of yeast
  • 150 g butter, soft
  • 150 g sugar
  • 100 ml milk, lukewarm
  • 4 eggs
  • 2 tbsp rum
  • 1 pinch of salt
  • 1 egg yolk
  • 2 tbsp milk
  • poppy
  • Almond(s), sliced
  • Sugar granules

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

delicious butter-yeast muffins

Put the flour in a bowl and make a well in the middle. Crumble the yeast into the well, add 2 tablespoons of sugar, and the lukewarm milk. Let it rise for about 15 minutes. Mix the dough with the eggs, butter, rum, salt, and the remaining sugar. Add more lukewarm milk if needed until the dough is very moist and smooth. Cover and let rise for at least half an hour. Mix the batter again and pour into greased muffin cups, about two tablespoons per cup, and let rise for another 15 minutes. Preheat the oven to 180°C (350°F) or 160°C (320°F) with fan/convection oven. Mix the egg yolk with the milk and brush onto the muffins. Decorate them with almonds, sugar, or poppy seeds as desired. Bake for 15 minutes. Let rest in the cups for another 5 minutes. Tip: Rum raisins in the batter taste very delicious and if a little water is added to the bottom of the oven when the muffins are baked, they will be particularly tender and airy.
