Soda – Syrup – Lemon

  • 600 ml Water, filtered
  • 5 Organic lemons
  • 500 g Cane sugar
  • 25 g Organic tartar

  1. Pour filtered water into a tall saucepan and bring to a boil. In the meantime, rinse the organic lemons with hot water and pat dry with kitchen paper. With a sharp knife or a wide peeler, peel off the peel thinly.
  2. Halve the peeled lemons and squeeze them out, collecting the juice. For me it was about 300 ml. When the filtered water boils, remove it from the stove. Add thin lemon peel & cane sugar and stir well with a spoon until cane sugar has dissolved.
  3. Then pour in the freshly squeezed lemon juice and pour in with the organic tartar, stir and allow to cool. At the beginning everything foams, but it works again quickly. Rinse bottles with hot water. Then pass the soda – syrup – lemon through a sieve.
  4. Filter and fill into the sterilized bottles. Close, chill. This syrup can be used in many ways :-).
