Ingredients
 

  • 1 kg Sugar
  • 8 Organic lemons
  • 100 g Fresh ginger
  • 1 Bd Peppermint

Instructions
 

  • Mix the sugar with 1 liter of water in a large braid. Peel the ginger finely and cut into thin slices. Add to the sugar water and simmer for 10 minutes.
  • In the meantime, rub the lemon peel and squeeze the lemons. Add the juice and peel as well as the pulp and seeds and the mint, stir and allow to cool. Preferably overnight.
  • Strain everything through a sieve lined with a cloth. Squeeze out the cloth. Bring to the boil again and immediately fill to the brim in screwable bottles, screw on the lid and, if possible, let stand on the lid for 15 minutes. This way the syrup will last longer.
  • Add sparkling water or sparkling wine as a summer drink, if necessary serve with a slice of lemon.
