Ingredients
 

  • 3 bunch Lemon balm, about 250 grams
  • 3 Untreated lemons
  • 8 slices Ginger
  • 3 L Water
  • 2 kg Sugar
  • 1 packet Citric acid

Instructions
 

  • So I have them in the garden, but you can buy bunches of lemon balm in a better supermarket or market ......... I dissolved the sugar, the water and the citric acid in a large pot and heated it until shortly before cooking. then I added the lemon balm, just cut it briefly with the stem and leaf..the lemons roughly chopped and also in the pot..the ginger cut into 8 slices and also ... I let this brew steep for 3 hours, then boiled I opened it briefly and took the pot off the stove.
  • I scooped the hot syrup through a sieve and filled it into small bottles of your choice ... I had for the most part bottles of 200 ml .. that resulted in 12 small and 4 large bottles ... this syrup also tastes good in sparkling wine , water, punch, etc., delicious and is quite sour ...
