Ingredients for 4 servings:
- 1 small melon(s), (Cavallion e.g.)
- 4 m.-sized tomatoes
- 100 g arugula
- 3 tbsp balsamic vinegar
- 3 tbsp olive oil, good
- Salt and pepper, from the mill
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Halve the melon and scoop out the seeds with a spoon. Then cut each melon half into 4 more wedges. Remove the rind and slice the melon pieces diagonally. Peel the tomatoes (place in boiling water for 10 seconds, then refresh) and cut into sixths, removing the insides so only the outer flesh remains. They will then look like curved diamonds. Wash the arugula and drain well. Arrange the ingredients on plates: Spread the melon slices evenly at the bottom, scatter the arugula over them, and arrange the tomato sixths on top. For the vinaigrette, combine the balsamic vinegar, oil, salt, and pepper in a small bowl and whisk until smooth, adding more seasoning if desired. Drizzle the vinaigrette over the prepared ingredients and serve. The oil and vinegar will separate after a short time—then simply stir again.
