Spicy chicory salad

Ingredients for 4 servings:

  • 4 chicory
  • 15 g ginger
  • 1 chili pepper(s), red
  • 1 lime(s), juice
  • 2 tbsp peanut oil
  • 2 tbsp walnut oil
  • some salt and pepper
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely dice the ginger and chili pepper. Wash, trim, and slice the chicory (removing the bitter stalk if necessary), and juice the lime. Mix the ginger, chili, lime juice, salt, pepper, and sugar well and let it steep for a while. Add the oil to the salad dressing and season to taste. It’s best not to add the chili cubes all at once; instead, taste the heat first. Finally, mix the sauce and chicory.
