Wild garlic parsnips

Ingredients for 2 servings:

  • 200 g parsnip(s)
  • 50 g water
  • 1 tbsp oil
  • 1 small onion(s)
  • 3 garlic cloves
  • 2 tbsp wild garlic pesto
  • 3 tbsp sour cream
  • salt and pepper
  • Parsley, optional

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Clean and dice the parsnips. Peel and dice the onion and garlic. Heat the oil and sauté the onion and garlic. Add the parsnips, pour in the water, and simmer for 10-15 minutes. Stir in the wild garlic pesto and sour cream and season to taste. Serve warm. Spring onions also go well with the dish.
