Baileys cake with meringue

Ingredients for 1 servings:

  • 3 m.-sized eggs
  • 6 tbsp Baileys Irish Cream
  • 80 g sugar
  • 2 packets of vanilla sugar
  • 60 g flour
  • 60 g starch flour
  • 2 tsp baking powder
  • 650 ml cream
  • 8 large meringues (ready-made)
  • some cocoa powder, for sifting

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 50 minutes

Beat 3 eggs with 2 tbsp Baileys, 80g sugar and 1 sachet of vanilla sugar for about 5 minutes. Sift 60g flour, 60g cornstarch and 2 tsp baking powder over the mixture and carefully fold everything in. Pour the batter into a 26cm springform pan lined with parchment paper and bake at 180°C (top and bottom heat) for about 20-30 minutes. Cut the cooled base in half horizontally. Whip 250ml cream with 1 tbsp vanilla sugar until stiff and season the cream with about 2 tbsp Baileys. Fill the base with this. Whip 400ml cream until stiff. Spread the cream over the edge and spread the remaining cream on the cake. Crumble 8 meringue rings and drizzle with about 2 tbsp Baileys, then spread over the cream. Finally, sift a little cocoa powder over the cake. Chill the cake for at least 1 hour.
