Ingredients for 1 servings:

  • 325 g flour
  • 125 g sugar
  • 1 egg(s)
  • 2 egg yolks
  • some lemon peel, untreated, grated
  • 225 g butter
  • 60 g marzipan paste
  • 100 g walnuts, ground
  • 1 egg yolk
  • 1 tsp rum
  • 1 egg yolk
  • 3 tbsp powdered sugar
  • some lemon juice
  • 90 g marzipan paste
  • 1 tbsp powdered sugar
  • Cocoa powder for dusting

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

Christmas cookies, makes about 30 pieces

Place the flour and sugar on a work surface, then add the egg and egg yolks. Sprinkle over the lemon zest. Add the butter in small pieces, then knead all the ingredients into a smooth dough. Wrap in cling film and let it rest in the refrigerator for 1 hour. Knead briefly again, roll out, and cut into 30-40 squares (6 x 6 or 5 x 5 cm). Mix the marzipan with the ground walnuts, egg yolk, and rum, and place a dollop in the center of each dough square. Fold the corners toward the center, place on a baking sheet lined with baking paper, and brush with beaten egg yolk. Bake in an oven preheated to 180-200°C for about 15 minutes. Mix 3 tablespoons of powdered sugar with a little lemon juice to form a spreadable glaze, then coat the love letters with it. Knead the remaining marzipan with the powdered sugar, roll it out, and cut out as many small hearts as you have cookies. Dust with cocoa powder and place on the love letters. Press down lightly and let the icing dry completely.
