Gingerbread – Marzipan – Sticks

Ingredients for 50 servings:

  • 125 g marzipan – raw mass
  • 200 g sugar
  • 4 eggs, of which the egg whites
  • 1 pinch of salt
  • 300 g almond(s), ground
  • 2 tbsp flour
  • 4 tsp gingerbread spice
  • Sugar, fine, for decorating

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Crumble the marzipan, add the sugar and 1 egg white, and mix until smooth. Beat the remaining egg white with salt until semi-stiff and add it to the dough. Add the almonds, flour, and gingerbread spice and knead everything well. Chill the dough for 12 hours. Sprinkle the work surface with granulated sugar. Divide the dough into walnut-sized pieces and shape each into a roll about 1 cm thick and 6 cm long. Roll these rolls in the sugar, place them on baking sheets lined with baking paper, and bake at 160°C (140°C fan-assisted oven) for about 15 minutes. The sticks will still be soft after baking, but don’t bake them any longer. Then let them cool completely, and they’re done.
