Ingredients for 4 servings:
- 8 chicken legs
- 8 chicken wings
- 1 tbsp olive oil
- 1 tbsp lovage, freshly chopped or dried
- 1 tbsp soy sauce
- 4 tbsp tomato paste
- 2 tbsp apricot jam
- 2 tbsp almonds, ground
- 1 tsp sambal oelek
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes
Mix all ingredients, except the chicken pieces, into a marinade. Push half of the marinade under the skin of the chicken pieces. Brush the outside of the pieces with the other half of the marinade and marinate for at least 1 hour. Bake the legs for 30 minutes and the wings for 20 minutes at 175°C in a convection oven (200°C, top/bottom heat). Serve with vegetable skewers or an avocado dip. This also works with a whole chicken; in this case, increase the baking time to 40-50 minutes.
