Rice flour cake with plums

Ingredients for 12 servings:

  • 55 g butter / unhydrogenated margarine
  • 50 g honey, up to 60 g
  • ¼ tsp ground cinnamon
  • 110 g flour (rice flour)
  • 55 g nuts, any, ground
  • 75 ml mineral water, cold carbonated
  • 600 g plum(s)
  • Fat, for the pan

Cream the butter/margarine with the honey and cinnamon until fluffy. Then add the rice flour, nuts, and mineral water and mix quickly. Let the batter rest for about 20 minutes. Meanwhile, wash, halve, and pit the plums. Grease a 24 cm pan with a lid. Stir the batter again, spread it evenly over the pan, and form a rim. Arrange the plums on top of the batter. Cover the cake and bake on level 1.5 of three possible levels for about 30 minutes until browned from the bottom. Let the cake cool slightly in the pan, then remove. For 12 cakes, approximately 515 kJ / 125 kcal (2 g protein, 7 g fat, 18 g carbohydrates, 4 g fiber per cake).
