Homemade fish fingers

Ingredients for 4 servings:

  • 2 cod fillets or redfish fillets
  • 2 tbsp breadcrumbs or 1 day-old roll
  • 4 eggs
  • 100 g flour
  • 50 g butter
  • 100 ml oil
  • 1 lemon(s)
  • Salt and pepper, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

For the fish fingers, wash the fish fillets, pat dry, and carefully check for bones. Season the fillets with salt and pepper and cut into thick strips. Grate the bread roll into fine crumbs. Crack the eggs into a large plate and mix with a fork. Place the flour and breadcrumbs onto a large plate. First coat the fish pieces in the flour, then dip them in the beaten egg, and finally coat them in the breadcrumbs. Heat butter and oil in a pan and fry the fish fingers until golden brown on both sides. Briefly place them on kitchen paper to remove any excess fat. Wash the lemon, dry it, and cut it into thin slices. Serve the fish fingers garnished with the lemon slices. Delicious with homemade mashed potatoes.
