Ingredients for 4 servings:

  • 750 g salsify
  • 1 m.-sized lemon(s), untreated
  • 1 tsp, leveled nutmeg, grated
  • 1 pinch(s) white pepper, finely ground
  • 1 tsp, levelled sugar, white
  • 100 g butter, mildly soured
  • 50 g breadcrumbs
  • n. B. Salt

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Thinly peel the untreated lemon and then squeeze the juice. Combine the juice, the fine zest, a pinch of pepper, the nutmeg, and the sugar in 0.5 liters of salted water and bring to a boil. Peel the salsify under running water, cut into 2 cm diamonds, and simmer in the salted water for 30 minutes until al dente. Strain the liquid and remove the lemon peel. Melt the butter in a pan, add the breadcrumbs and the well-drained salsify diamonds. Fry over medium heat, stirring frequently, until lightly browned. The fried salsify is now ready to serve and can be served as a side dish to all kinds of meat dishes.
