Smokey's cauliflower in lime cream sauce

Ingredients for 2 servings:

  • 1 m.-large cauliflower
  • 2 stalk(s) spring onion(s)
  • 1 lime(s)
  • 1 clove(s) garlic, chopped
  • 150 ml vegetable stock
  • 150 ml cream
  • 3 tbsp crème fraîche
  • 1 tbsp flat-leaf parsley, finely chopped
  • 1 tbsp butter
  • 2 tbsp pepper, green, pickled
  • n. B. Pepper from the mill
  • n. B. Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Grate the zest from the lime and then juice it. Divide the cauliflower into small florets and steam in a steamer until al dente. Meanwhile, sauté the spring onion and garlic in the hot butter. Deglaze everything with the stock, add 2 teaspoons of lime juice, the zest, and the green pepper, and simmer slightly. Add the cream and crème fraîche. Let everything simmer gently. Season the sauce with pepper and salt and stir in the parsley. Pour the sauce over the cauliflower.
