Cookie Dough Coconut

Ingredients for 4 servings:

  • 100 g butter, soft
  • 100 g coconut flour
  • 40 ml coconut drink
  • 2 tsp brown sugar
  • 1 tsp vanilla sugar
  • 30 g chocolate shavings
  • 1 pinch of salt

Instructions

Working time approx. 5 minutes; Rest time approx. 15 minutes; Total time approx. 20 minutes

Alternative to classic cookie dough

Place the softened butter and coconut milk in a bowl and mash with a fork. Gradually add the flour to the mixture and mix. Then add the sugar, vanilla sugar, salt, and chocolate shavings and mix. Refrigerate the cookie dough for at least 15 minutes before eating. Depending on how sweet you want it, you can vary the amount of sugar. However, since coconut flour already contains sugar, I’ve specified less sugar in the recipe. The coconut flour can be eaten raw; it doesn’t need to be heated beforehand.
