Ground elder and chicory salad with tomatoes

Ingredients for 2 servings:

  • 2 handfuls of ground elder
  • 1 small chicory plant
  • 1 large tomato(s)
  • some parsley
  • 2 tbsp apple cider vinegar
  • 1 tbsp walnut oil
  • 1 tbsp water
  • salt and pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash and tear the ground elder. Wash and cut the chicory into strips. Wash the tomato, remove the stem, and chop finely. Mix the dressing and season to taste. Mix everything together and serve.
