Spicy Brussels sprouts

Ingredients for 3 servings:

  • 500 g Brussels sprouts
  • 500 ml vegetable stock
  • 500 ml water, salted, for pre-cooking
  • 1 piece(s) sugar cube
  • 1 ½ tbsp butter
  • 1 tbsp, heaped flour
  • 1 tbsp horseradish, hot, dem jar
  • salt and pepper
  • nutmeg
  • Paprika powder, hot
  • some cream, if desired

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Separate the vegetable florets from the unsightly outer leaves, halve them, and cut out the small stem. This will take a little longer, but the sprouts will not taste bitter. Cook the prepared Brussels sprouts in salted water with a sugar cube for about 6-8 minutes until al dente. Drain the florets without reserving the cooking liquid. Melt the butter in a saucepan, stir in a little flour, and deglaze with fresh vegetable stock, stirring constantly, until a creamy consistency is achieved. Now stir in the horseradish and season well with the other spices. Add the cooked Brussels sprouts and let everything simmer gently for a while. If desired, add a little cream to finish. Serve.
