Lemon poppy seed cookies

Ingredients for 1 servings:

  • 150 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1 tsp vanilla flavor
  • 50 g sugar
  • 40 g powdered sugar
  • 120 g double cream cheese
  • 4 tsp butter
  • 1 egg(s)
  • 2 tsp poppy seeds, approx. 10 g
  • 1 lemon(s), juice and zest

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Spoon cookies

Preheat oven to 175°C. Add the ingredients one at a time to a mixing bowl. Mix everything well. Using two teaspoons, place small heaping spoons onto a baking sheet lined with parchment paper (keep space between them; the cookies will spread slightly). Bake for about 10-12 minutes. The cookies should only brown slightly—just the bottoms should get a little color. Cool on a wire rack.
