Vegan celery curry puree

Ingredients for 1 servings:

  • 1 celeriac
  • curry powder
  • salt and pepper
  • 1 tsp olive oil
  • 1 tsp margarine, optional
  • n. B. water

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

Bring water to a boil, peel the celeriac (it’s easiest to slice it and trim the edges around the outside), then dice it and simmer for about 30 minutes until soft. Purée the celery with a hand blender, adding enough of the cooking water until the desired consistency is reached (about 1/2 ladleful, less is better before it becomes too runny). Then season with curry powder (I used 1 teaspoon, but that will be too much for most people), salt, and pepper, and mix in 1 teaspoon each of olive oil and/or margarine, depending on your taste.
