Ginger-almond cookies

Ingredients for 1 servings:

  • 250 g butter
  • 125 g sugar
  • 1 pinch of salt
  • 125 g ground almonds
  • 375 g flour
  • 1 tbsp lemon juice
  • 3 tsp ginger root, freshly grated
  • Flour, for rolling out
  • Almond(s), peeled, for decoration

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 15 minutes

for approx. 90 pieces

Knead the butter, sugar, salt, almonds, flour, lemon juice, and ginger with a little cold water until a smooth dough forms. Chill the dough for 1-2 hours, then roll it out on a floured surface and cut into rectangles using a scalloped pastry wheel. Top each with 1/2 almond. Place on baking sheets lined with parchment paper and bake in a preheated oven at 175°C for about 15 minutes until golden brown.
