Ingredients for 1 servings:
- 2 egg yolks
- 3 tsp lemon juice
- 100 g sugar
- ½ tsp baking powder
- 50 g cornstarch
- 50 g flour (wholemeal flour)
- 100 g powdered sugar
- 2 tbsp lemon juice

Christmas cookies
Beat the egg yolks with lemon juice and sugar until light and fluffy. Combine the flour, cornstarch, and baking powder and stir into the egg mixture, then knead the dough with your hands until smooth. Roll out the dough on a floured surface and cut out stars. Place the stars on a baking sheet lined with baking paper. Bake for about 7-8 minutes at 200°C (top/bottom heat) or gas mark 3. Once cooled, glaze with lemon glaze. To do this, whisk together the icing sugar and lemon juice until smooth.
