Light version with sour cream, vegetarian. My grandmother’s original recipe

Peel the potatoes, cut into chunks or slices, and boil in boiling water for about 20 minutes. Drain and let cool. Melt the butter in a large saucepan and fry the finely chopped onions until golden brown. First, add the cup of sour cream, stir, and bring to a boil. Then add a splash of milk; the consistency should be slightly thick. Now add the cold potato pieces and heat gently, stirring, until everything is simmering. Adjust the consistency with splashes of milk. Just before serving, stir in the freshly chopped chives. These creamed potatoes are a great side dish to meatballs, schnitzel, or fish.
