Marinated salsify

Ingredients for 2 servings:

  • 400 g salsify (frozen)
  • salt water
  • 1 tsp mustard
  • 1 tsp maple syrup
  • 3 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • 3 tbsp water (cooking water from the salsify)
  • 30 g tomatoes, dried, chopped
  • 30 g olives, pitted, chopped
  • 2 tbsp parsley, chopped
  • 30 g Parmesan, sliced
  • 30 g pine nuts, roasted
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 40 minutes

Cook the salsify in salted water according to the package instructions. Then cut into bite-sized pieces and place in a casserole dish or bowl. Mix 3 tablespoons of the cooking water with the mustard, maple syrup, apple cider vinegar, and olive oil. Add the sun-dried tomatoes, olives, and parsley, and season with salt and pepper. Pour the marinade over the salsify and mix well. Then refrigerate and let it marinate. After the chilling period, sprinkle with shaved Parmesan cheese and toasted pine nuts to taste. The marinated salsify makes a great filling for pancakes. A fresh baguette also tastes great with it.
