Ingredients for 4 servings:
- 300g penne
- 2 red bell peppers
- 400 g creamed spinach, frozen
- 2 onions
- 200 g Parmesan, grated
- 50g Gorgonzola
- Salt
- Black pepper, freshly ground
- 3 tbsp olive oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Cook the pasta al dente according to the package instructions. Thaw the spinach. Peel and dice the onions and finely chop the peppers. Sauté them in a large pan with olive oil. Add the spinach and simmer over low heat for a few minutes. Add the pasta to the pan. Stir in the Gorgonzola and Parmesan cheese, season with salt and pepper, and serve warm.
