Vanilla crescents low fat

Ingredients for 45 servings:

  • 50 g ground almonds
  • 450 g flour
  • 120 g margarine (half-fat margarine)
  • 250 g powdered sugar
  • 150 g yogurt, vanilla or natural
  • 1 packet of vanilla sugar (Bourbon)
  • ¼ tsp cookie spice mix

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

Knead the almonds with flour, low-fat margarine, 200g powdered sugar, vanilla yogurt, Bourbon vanilla sugar, and cookie spice by hand or using the dough hook of a hand mixer until a dough forms. Chill for about 1 hour. Preheat the oven to 180°C. Form the dough into thin rolls, cut into approximately 5cm long pieces, and shape them into croissants. Place the croissants on a baking sheet lined with baking paper and bake for about 10 minutes. Remove the finished croissants from the oven and, while still hot, generously dust them on all sides with the remaining powdered sugar.
