Simple Oreo Cupcakes

Ingredients for 1 servings:

  • 3 eggs
  • 180 g sugar
  • 300 g butter
  • 1 packet of vanilla sugar
  • 2 tsp baking powder
  • 200 g flour
  • 35 ml milk
  • 40 Oreo cookies
  • 150 g powdered sugar

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Beat the eggs with the sugar until light and fluffy, then add half of the butter. Then mix with the vanilla sugar, baking powder, flour, and milk to form a smooth batter. Put all but 6 Oreos in a freezer bag and roll over them with a rolling pin to break them into crumbs. Then fold half of the Oreo crumbs into the batter and fill the muffin tins. Bake at 180°C (top/bottom heat) for 30 minutes. Meanwhile, mix the remaining 150g of butter with the icing sugar to form a cream. If the cream is too thick, simply add a tablespoon of milk. Then spread the cream onto the cooled muffins using a piping bag or a tablespoon and sprinkle with the remaining Oreo crumbs. Cut the remaining 6 Oreos in half with a knife and place half an Oreo on each cupcake.
