Ingredients for 4 servings:

  • 1 gr. can/n beans, green
  • 40 g butter
  • 1 m.-sized onion(s)
  • 30 g flour
  • 2 tbsp tomato paste
  • nutmeg
  • salt and pepper
  • Cayenne pepper
  • Vinegar
  • Sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Strain the beans, reserving the liquid. Add water to make up to ½ liter and set aside. Heat the butter in a saucepan and fry the onions until translucent. Add the flour and sauté until lightly browned. Deglaze the roux with the bean water, bring to a boil, stir in the tomato paste, and reduce the sauce slightly. Add the beans, bring back to a boil, and season with salt, pepper, nutmeg, cayenne pepper, sugar, and vinegar.
