Ingredients for 1 servings:

  • 275 g flour
  • 1 tsp baking powder
  • 125 g sugar
  • 125 g butter
  • 375 g plum(s)
  • 100 g butter
  • 125 g sugar
  • 2 m.-sized eggs
  • 500 g low-fat curd cheese
  • 1 pack of pudding powder
  • 4 tbsp lemon juice
  • 1 tbsp powdered sugar

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Mix all but one tablespoon of the flour with the baking powder and sugar. Melt the butter, pour it into the flour and use a dough hook to crumble everything. Grease a springform pan (24 cm diameter). Spread three-quarters of the crumble on the bottom of the pan and press down lightly, forming a rim about 2 cm high. Cover and chill for about 30 minutes. Meanwhile, wash the plums, remove the stones and cut into wedges. For the filling, cream the softened butter with the sugar until fluffy. Beat in the eggs one at a time. Also stir in the quark, custard powder and lemon juice. Spread the filling on the pastry base and arrange the plums on top. Mix the remaining crumble with the tablespoon of flour and spread around the outer edge. Bake in the oven at 200°C, fan oven 180°C, gas mark 3 for about 50 minutes. Allow to cool and sprinkle with icing sugar.
