Oriental scrambled eggs

Ingredients for 2 servings:

  • 4 eggs
  • 3 onions, finely diced
  • 2 garlic cloves, squeezed or finely chopped
  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tsp parsley
  • 2 tbsp tomato ketchup, 150g peeled tomatoes ad can or tomato paste
  • 150 g cheese, Gouda to taste
  • 2 tbsp olive oil
  • 1 sausage (Cucuc – Turkish garlic sausage)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice and press the onions and garlic. Finely chop the parsley. Heat 2 tablespoons of oil in a pan and sauté the onions and garlic (do not let them brown). Crack the eggs into the pan and quickly pour them into the pan. Immediately add the peeled tomatoes or tomato ketchup (if using tomato paste, please dilute with water first). Then add the cumin and coriander. Bring to a simmer, then gradually add the cheese and stir through. You can also add cucuc for a heartier dish, depending on your taste. When the cheese has completely melted, divide it among the plates. Serve with flatbread or white bread.
