Ingredients for 1 servings:
- 400 g flour
- ½ tsp baking powder
- 90 g walnuts, finely ground
- 120 g powdered sugar
- 250 g butter
- 2 pinches of cinnamon powder
- 2 pinch(s) clove powder or gingerbread spice, then omit the cinnamon
- 4 tbsp milk
- 350 g jam (blackcurrant jelly)
- 1 egg yolk
- 1 tbsp milk

simple and quick Christmas cookies
Knead the flour and milk into a shortcrust pastry. Wrap the pastry in cling film and place in the fridge for 30 minutes. Roll out 2/3 of the dough on a baking sheet. Roll out the remaining dough, cut into 3 mm wide strips and place on a tray in the freezer for 10 minutes. If you have a lattice cutter you can use that. I always do it that way, but I also put it back in the fridge to chill. Gently warm the jelly and spread it evenly over the base, then place the lattice on top. Mix the egg yolk with the milk and brush the lattice with it. Bake in a preheated oven at 175°C for about 30 minutes. Let it cool and then cut into squares about 4 x 4 cm. These are always the first type of cookies I bake because the longer they stand, the better they taste.
