Soft sandwich biscuits with delicious cream cheese filling, ideal for Valentine’s Day, recipe for 12 biscuits
Mix the 65g butter with the sugar and a teaspoon of vanilla extract, then beat in the egg. In a separate bowl, mix the flour with the salt, baking powder, and cocoa powder, then sift them into the butter mixture alternately with the buttermilk and mix. Tint red with the food coloring, spread tablespoon by tablespoon, leaving enough space between each, on a baking sheet lined with baking paper, and briefly shape into rounds again. Bake for approx. 8-10 minutes at 180°C (convection oven), then let cool on the baking sheet for 2-3 minutes. For the cream, beat the 50g butter with the vanilla extract until creamy, then mix in the cream cheese, and finally sift in the powdered sugar. Once the cookies have completely cooled, sandwich the cookies in pairs with the cream cheese mixture and decorate as desired, e.g. with powdered sugar or white chocolate and chopped walnuts. Recipe makes 12 cookies.
