Ingredients for 4 servings:

  • 300 g gooseberries, green or red
  • 50 g sugar
  • 1 tbsp water
  • 1 packet of vanilla pudding powder for cooking
  • 400 ml milk
  • 2 tbsp sugar
  • 100 ml whipped cream
  • 3 tbsp hazelnut brittle

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 55 minutes

easy and fast

Clean the gooseberries, remove the stems, and set aside 8 for garnish. Cook the remaining gooseberries for 2-3 minutes with 50g of sugar and 1 tablespoon of water, then puree. Prepare the vanilla pudding according to the package instructions, using only 400ml of milk and 2 tablespoons of sugar. Fold the gooseberry puree into the pudding and divide between 4 glasses. Refrigerate the glasses for 30 minutes. Meanwhile, whip the cream until stiff. Pipe on top just before serving, garnish with brittle and the reserved gooseberries.
