Brägili or Brägele

Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 tbsp clarified butter
  • 2 shallots
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Alemannic fried potatoes

Boil the potatoes, peel them (let them cool slightly), and slice them very thinly. Thinly slice the shallots and fry them in a heavy pan, ideally a grandma’s iron skillet (a coated skillet works too), along with the potato slices in clarified butter until golden brown. Finally, season with salt and pepper. Depending on the main course, you can also garnish the Brägele with parsley and thyme, or fry bacon cubes in the pan with the meat. Brägele are typically served as a side dish with sausage salad, as a main course with Bibeleskäs (cheese), or with Schäufele (shoulder of pork) and liver.
