Vegan blackberry cookies

Ingredients for 1 servings:

  • 150 g jam (blackberry jam)
  • 2 tbsp soy flour mixed with 2 tbsp water
  • 50 g oil
  • 1 tsp baking powder
  • 200 g flour
  • 125 g dried berries, e.g. cranberries or blueberries
  • 90 g soy milk (soy drink) or red grape juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

with soy flour

Combine flour and baking powder. Mix blackberry jam with soy flour. Add oil and milk. Stir in the flour and fold in the dried berries. Using 2 tablespoons, drop small dollops of batter onto a baking sheet lined with parchment paper. Bake at 180 degrees Celsius for about 10 minutes.
