Ingredients for 1 servings:

  • 2 cups flour
  • 12 tbsp butter, cold
  • 4 tbsp water, ice cold
  • 1 ½ tsp salt
  • 2 tsp sugar
  • 2 large apples, or 3 small ones
  • ¼ cup sugar
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 pinch of salt
  • 1 tbsp flour
  • 1 tsp vanilla extract

Instructions

Working time approx. 45 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 55 minutes

Dough: Cut the butter into small cubes. Place it in a mixing bowl and add the flour, then mash the butter and flour with a fork. Add the salt and sugar, then the ice water and knead well. If the dough is still too dry, add more ice water if necessary. Knead everything together to form a dough, wrap in plastic wrap and refrigerate for 30 minutes. Filling: Peel and chop the apples. Add the sugar, brown sugar, nutmeg, salt and vanilla extract and mix. Roll out about 3/4 of the dough thinly with a rolling pin. Using a small bowl slightly larger than the muffin tin, cut out circles. Place these in the muffin tin and pierce the base a few times with a fork. Pour the filling into the tin. Roll out the remaining dough and cut into strips. Arrange the strips in a lattice pattern on top of the filling. Bake at 180 degrees Celsius for about 40 minutes until golden brown. They taste best served warm with a delicious vanilla sauce.
