Cheese rösti with bacon, ham and onions

Ingredients for 4 servings:

  • 1 ½ kg potatoes
  • 300 g cheese, raclette- cut into fine cubes
  • 150 g breakfast bacon, finely sliced
  • 150 g ham, cooked, finely sliced
  • 2 medium-sized onions, cut into strips
  • some salt and pepper
  • some butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the potatoes and cook in a pressure cooker for 7 to 8 minutes (the core of the potato should still be slightly firm). Let the potatoes cool, then peel and grate them. Heat a frying pan, first add the bacon and cook for a while, then add the ham and cook for a while. Finally, add the onions. Cook everything thoroughly, season with salt and pepper, and set aside. Preheat the oven to 150 to 160 degrees Celsius (convection oven). Butter a slightly taller glass dish (7 cm high, 20 cm wide, 30 cm long), suitable for the oven. Place some grated potatoes in the dish and season with salt and pepper. Sprinkle with half of the raclette cheese and the bacon, ham, and onion mixture, top with some more grated potatoes, season with salt and pepper, and then add the rest of the raclette cheese and the bacon, ham, and onion mixture. Top with the rest of the rösti, season with salt and pepper, and a few knobs of butter, then bake the whole thing in the oven for 50 to 55 minutes. Ten minutes before the end, turn the oven up a bit so the rösti gets a nice brown. Serve with creamed spinach, leeks, salad, or simply a fried egg.
