Vegetable and minced meat stew

Ingredients for 8 servings:

  • 500 g minced meat, possibly mixed
  • 1 large onion(s), diced
  • n. B. Oil for frying
  • 1 kg potatoes
  • 500 g tomatoes, pureed
  • 1 liter vegetable broth
  • 100 g leek, thinly sliced
  • ½ can corn, drained
  • 450 g soup vegetables, diced
  • Salt and pepper, possibly herb salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Fry the minced meat in oil with salt and pepper, finely chop, and stir in the onion, sautéing until translucent. Peel and dice the potatoes, add the soup vegetables and leeks, the corn, the passata, and the liter of vegetable stock to a pot and simmer with the minced onion mixture for about 60 minutes. Season well with pepper and salt (1.5-2 teaspoons of salt). You can also use herb salt if you like. My homemade baguette goes well with this.
