Baked apples with currant jelly

Ingredients for 4 servings:

  • 4 apples (Boskoop)
  • 4 tbsp nuts, chopped
  • 4 tbsp raisins
  • 4 tbsp jelly, currant
  • 1 tsp basil, freshly chopped
  • 1 pinch(s) coriander, ground
  • ¼ tsp cinnamon powder
  • 40 g butter
  • 125 ml red wine
  • 1 tbsp rum
  • 125 g honey
  • 8 scoops of ice cream, vanilla

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and core the apples. Mix the nuts, raisins, jelly, basil, coriander, and cinnamon together and fill the apples. Then place the stuffed apples in a greased baking dish. Heat the butter, wine, rum, and honey and stir until creamy. Pour the liquid over the apples and bake in the oven at 180°C (350°F) for about 1 hour. Serve hot with scoops of vanilla ice cream. TIP: These baked apples also taste delicious with vanilla sauce.
