Farmer's salad in a cucumber ring

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 4 cherry tomatoes
  • 1 onion(s), red
  • 60 g sheep’s cheese
  • 6 olives, green or black
  • ½ lemon(s), squeezed
  • 1 tsp maple syrup
  • herbal salt
  • pepper
  • 1 tsp lovage (lovage paste), as desired
  • 2 tbsp olive oil
  • Lemon(s) in wedges

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

You will also need small wooden skewers. Wash and peel the cucumber. Use a vegetable peeler to slice two long strips, form a ring, and secure with the wooden skewer. Dice the rest of the cucumber. Wash and trim the tomatoes and cut them into thin wedges. Peel the onion and slice it into rings. Dice the feta cheese and drain the olives. For the dressing, squeeze the lemon into a small bowl and mix with the herb salt, pepper, maple syrup, and lovage paste. Whisk in the oil. Place the cucumber rings on a plate, arrange the lettuce in the rings, and arrange onion rings around them. Drizzle the dressing over the top and garnish with lemon wedges.
